Garlic Parm Fries

Ingredience

3-4 russet potatoes

Avocado oil

3-4 cloves freshly minced garlic

Fresh parsley

Grated Parmesan

Sea salt

2 tbsp butter

Start by washing potatoes, then cut the ends and sides off so they can lay flat. Cut into thin slices, then stack the slices and chop thin and evenly to make shoe string French fry’s.

Add the potatoes to an ice bath to soak for 30mins, rinse and repeat until water runs clear.

Mince your garlic and Parmesan while potatoes are soaking.

Lay potatoes out on a rack to dry and pat with a paper towel, and let sit to remove all the water.

Heat your oil in a pan then test one fry to make sure oil sizzles.

Add your first layer (do not overcrowd), shake pan to make sure the fries don’t stick. Let them partially cook, remove from oil, place on drying rack to cool and once they are dried increase heat of pan. Add the fries back into oil to give them a nice crisp.

Once finished let dry on rack again, then add to bowl and toss with sea salt, parmesan, parsley, garlic and a little butter.
