Fillet ‘o’ Fish

Recipe

4 cod loins or alternative fish

2 eggs - fork whisked

3 slices of whole grain bread - crumbed

4 tbsp plain flour

100mls milk

Pinch of salt

4 brioche buns & 4 slices of mature cheddar to serve

Tartare Sauce

4 tbsp mayonnaise

2 gherkins - finely chopped

2 tbsp capers - finely chopped

1 tbsp parsley - chopped

1 tbsp dill - chopped

1 tbsp lemon juice

Police oil for shallow frying

Pokyny

To make the tartare sauce, mix all the ingredients together in a bowl

Whisk up the egg with a fork in a shallow bowl

Pop the bread and a pinch of salt into a food processor and pulse to make breadcrumbs. I used seeded bread for extra crunch

dip each fish fillet into the flour, egg and then bread crump mix and set aside

Heat some oil on a medium high heat & pan fry each fish fillet for a few minutes on each side until cooked through
