250ml boiling water
2 tbsp tomato paste
2 tsp harissa or 1 tsp smoked paprika
1 tsp salt
200g bulgur wheat
1 tsp ground cumin
6 turns black pepper
Handful mint, chopped
60ml olive oil
2 tbsp pomegranate molasses
Juice 1/2 lemon
1 small red onion, finely sliced
2 tomatoes, deseeded and finely chopped
1 each green and red pepper, deseeded and finely chopped
5 spring onions, finely sliced
1 cucumber, halved, deseeded and finely chopped
1 bunch flat leaf parsley, chopped
Pokyny
In a jug, mix the boiling water with the tomato paste, harissa and salt. Put the bulgur wheat in a bowl and pour over the water and tomato mixture, stir and leave to stand for 10 minutes covered in cling film until the liquid has been absorbed.
Fluff the bulgur up with a fork. Add the cumin, black pepper, mint, olive oil, pomegranate molasses, lemon juice and red onion and stir well. Then lightly mix in the tomatoes, peppers, spring onions, cucumber and parsley.
