Beef Chilli with Rice Recipe

Sear off your beef until it’s crispy, then remove it from the pan. In the same pan, fry the onion, garlic, and peppers until softened. Add the beef back in, then stir in the tomato purée, chopped tomatoes, all your spices, a couple of beef stock cubes, chipotle paste, kidney beans, and balsamic vinegar. Let it simmer gently for 30 minutes to an hour.
Come back and add sweetcorn, a squeeze of lime, and about 300–350g of cooked basmati rice. Give it all a good stir and let it heat through until everything is ready to serve.
And that’s pretty much it! This is a ridiculously straightforward recipe. I made five portions, but the ingredients and instructions above are for four. Enjoy!
Disclaimer - I used cheese, which obviously would cost a little bit extra, but you don’t have to if you’re really on a budget. I would really recommend sour cream as well—it makes a big difference.
