FETA, WATERMELON & FENNEL

Ingredience

For the salad, assemble:

50 g rocket/spinach

100 g watermelon, deseeded and chopped

½ fennel bulb, thinly sliced

handful of pomegranate seeds

50 g feta, chopped

handful of pumpkin seeds

handful of fresh dill fronds

For the dressing, mix:

1 tbsp extra virgin olive oil

1 tsp lemon juice

pinch of salt and pepper

RAW ALTERNATIVE

Replace the feta with a handful of cashew nuts, 1 tsp capers and ½ small red onion

Pokyny

Cut watermelon, fennel and feta.

Wash spinach.

Prepare a dressing.

Mix all together.
