Bang Bang Shrimp

Bang Bang Sauce:
1 cup mayonnaise
⅓ cup sweet Thai chili sauce
3 tbsp Sriracha sauce
½ lime, juiced
Shrimp
2 lbs shrimp, peeled and deveined
1 tbsp Sriracha
1 tbsp Kinder’s AP seasoning
2 eggs
1 tbsp ginger paste
Flour Dredge:
1 cup all-purpose flour
½ cup cornstarch
1 tsp paprika
1 tsp garlic powder
1 tsp salt
½ tsp black pepper
½ tsp curry powder
Neutral oil (vegetable or canola) for frying
Scallions, chopped (for garnish)

In a small bowl, whisk together the mayonnaise, sweet Thai chili sauce, Sriracha, and lime juice until smooth. Set aside.
2.Prep the Shrimp in a mixing bowl, toss the shrimp with Sriracha, Kinder’s AP seasoning, eggs and ginger paste. Mix until well combined
Set Up the Dredging Station in one bowl combine the flour, cornstarch, paprika, garlic powder, salt, pepper, and curry powder.
4.Coat the Shrimp dredge in the seasoned flour mixture, pressing lightly to coat well.
Fry the Shrimp. Heat oil in a deep skillet or deep fryer to 350°F (175°C).
6.Fry shrimp in batches for 2-3 minutes or until golden brown and crispy.
7.Remove and drain on a paper towel-lined plate.
8.Toss & Serve, in a large bowl, gently toss the fried shrimp with the Bang Bang sauce until coated.
9.Garnish with chopped scallions and serve immediately.
