Arrabbiata Prawn Orzo

Arrabbiata Prawn Orzo
A comforting bowl of silky orzo in a spicy tomato sauce with juicy lemony prawns.
A relaxing dish to make, impressive to serve and addictive to eat!
Put this on your weekly rotation!
Veg substitute would be Aubergine)
400g Orzo
3 TBSP Olive Oil
1 TSP Fennel seeds
1 TSP Chilli Flakes (or to your taste)
1 small onion diced
6 cloves crushed garlic
1 TSP tomato paste
6 TBSP Passata
300ml vegetable stock (add more if needed)
Handful Basil leaves
Salt and pepper to taste
Rocket or basil to garnish
300g Raw King Prawns (I defrost frozen ones)
1 TSP Paprika
1/2 teaspoon oregano
Salt to Taste
1 TBSP olive oil
Small knob of butter
Generous squeeze of Lemon to finish
In olive oil sizzle the fennel seeds and chilli flakes
Vejledning
Add the diced onions, soften for a few minutes followed by the garlic. Cook for a minute or two and pour in the orzo, stir until the little grains are fully coated in the oily garlic & onions.
Add the tomato paste and passata, stir, and gradually add the vegetable stock until cooked.
Season with salt and pepper, fresh basil leaves.
Meanwhile, make a slit in the prawns and season with the paprika, oregano, salt and olive oil. Mix and stir fry over a high heat, stirring constantly. Switch off heat, finish off with a knob of butter and a generous squeeze of lemon.
Plate up as shown, garnishing with Rocket leaves or remaining basil leaves.
Veg Alternative : Roasted aubergine cubes in same marinade)
