Chicken Shawarma Folded Garlic Flatbreads

Ingredient (serves 2):

For the marinade:

200g thinly sliced chicken breast

2 Tbsp lemon juice

Salt

Pepper

½ tsp ground cumin

½ tsp smoked paprika

¼ tsp turmeric

¼ tsp ground coriander

¼ tsp garlic granules

Pinch of cinnamon

For the flatbreads:

100g self raising flour

110g fat free thick greek yoghurt

Pinch of salt

To assemble:

2 half fat cheddar slices

40g fat free greek yoghurt

Tsp lemon juice

1 and ½ tsp chopped garlic

5g light butter

Sliced salad tomato

Shredded lettuce

Vejledning

Start by adding all of the ingredients for the marinade in a bowl.

Whilst the chicken marinades, in a bowl, mix together the self raising flour, greek yogurt and salt. Once most of it is clumped together, use your hands to mould into a ball. Then split into two.

Roll out until a thinner long shape has formed.

Next, add the chicken to a pan fry until cooked through, remove.

Heat a large pan and add each rolled out dough into the pan. Fry for 8 minutes or so until golden. Add the cheese slices and chicken on one half along with the tomato, fold the other half of the flatbread over. Leave over low heat for a couple of minutes until the cheese has melted.

Mix together the greek yoghurt, ½ tsp chopped garlic, pinch of salt and tsp of lemon juice. Set to one side.

Mix together the butter and garlic and blast for 15 seconds in the microwave.

Remove the flatbreads and drizzle over the garlic sauce, topping with the shredded lettuce. Brush over the garlic butter and garnish with fresh coriander.
