Drunken Noodles (Pad Kee Mao)

Ingredienser

Veggies

• 14 oz flat rice noodles

• 3 Tbsp olive oil

• 2 bell peppers

• 1 onion

• 6oz mushrooms

• 1 cup beans

• 1 carrot

• 1 small head broccoli

Optional meat

• 1lb chicken, diced or

• 1lb ground beef

Sauce

• 1 c broth (any kind)

• 2 Tbsp corn starch

• 1 tsp sesame oil

• ¼ c fish sauce

• ¼ c oyster sauce

• 3 Tbsp rice vinegar

• 2 Tbsp soy sauce (low sodium)

• Juice of 1 lime

Flavoring

• Dried chili peppers or flakes, to taste

• 2 Tbsp ginger

• 5-7 cloves garlic, minced

• ⅓ c brown sugar

• 2 handfuls basil (Thai or sweet)

Vejledning

1. Chop veggies. Whisk sauce ingredients together

2. To a large pan on high medium-heat, add the oil and chopped veggies and cook for 10-ish minutes. I like to start with onions and mushrooms for 4 minutes, then add carrots and beans for 3 minutes, covering with a lid. Then add peppers and broccoli for 3 minutes, again covering.

3. While veggies are cooking, cook dried rice noodles in boiling water until desired texture.

4. Add chili peppers/flakes (optional), ginger, garlic, and brown sugar to veggies, cook 1-2 minutes, stirring.

5. Add rice noodles to veggie pan. Stir in suace and let simmer 5 minutes.

6. Remove pan from heat. Add basil and stir until basil just wilted. Serve immediately.

Optional Meat Directions: insert after step 1 above:

1. Chop meat and add to a large pan on medium-high heat (Pre-glaze pan with olive oil if cooking chicken).

2. Add ⅓ sauce and optional chili peppers/flakes, simmer until just cooked.

3. Resume regular directions at step 2, adding veggies to meat pan.
