Spiced Coconut Basil Chicken Over Rice

4 chicken boneless thighs or 2 breast cut into pieces

1 teaspoon salt , black pepper, cayenne or paprika

1-2 tablespoons coconut oil

1/2 onion diced

5 garlic sliced

1 inch ginger minced

Optional - red Thai chili or jalapeños

1 tablespoon fish sauce

1 tablespoon soy sauce

1 teaspoon curry powder

1 can coconut milk

2-3 tablespoons basil

1/2 teaspoon chili flakes

into pieces and seasoned with salt or pepper, cayenne or paprika and a touch of oil mix well.

Dice onion, mince ginger and garlic . Chilies if you're using them.

In coconut oil, cook and sear about five minutes cook first minute without disturbing it to get a nice sear.

Remove the chicken. Add coconut oil if needed and sauté onions, ginger , garlic, chilis.

Add in the coconut milk, curry powder, soy sauce, fish sauce. Let the sauce come together for about a minute.

Add in the chicken and stir. Adjust salt if needed.

Garnish with basil and chili flakes.

Serve over rice.
