Aloo Tikki - Potato Cakes

Perfect with chole (chickpeas) posting this recipe next. Or enjoy on their own with chutney, any sauce you like or mint yogurt.

Ingredients (makes approx 20 tikkis):

4 medium potatoes

1 onion (finely diced)

1 tbsp potato starch (optional, but it will help bind the tikkis and stop them from falling apart)

large handful chopped coriander

juice of half lemon

1 tsp ground cumin coriander or 1/2 of each

pinch ground cinnamon

salt & chillies to taste

oil to shallow fry

Vejledning

Peel, chop the potatoes to bite size and boil or steam until just tender.

Drain potatoes well and place into a large bowl.

Add onions, potato starch, ground cumin coriander, cinnamon, coriander, salt, chillies and lemon juice.

Mash together gently, don't over mash otherwise the potatoes will become sticky.

Make small balls from the mash and then flatten with your hands.

Shallow fry in oil in a frying pan until brown and slightly crisp on both sides.
