Date Salted Caramels

Date ‘caramel’

150g dates

1 tbsp smooth peanut butter

1 tsp coconut oil

Pinch of salt

1 tsp vanilla extract

Topping

100g dark chocolate

1 tsp coconut oil

Handful of salted peanuts

Flaky sea salt

Vejledning

Combine all ingredients for the date caramel in a food processor & blend until smooth. Add the filling to a sheet of parchment paper and press down, shaping into a square. Fold the other half of the parchment over the top. Roll it out until it is about 1/2 an inch thick. Freeze for 1-2 hours and cut into squares. Melt the chocolate & coconut oil together in a microwave on 10 second bursts until smooth. Dip each caramel into the chocolate and top with peanuts/flaky sea salt. Enjoy! These will keep up to 2 months in a sealed container in the fridge.
