Smoky Crispy Chicken Sandwich

Ingredients (serves 2):
2 x 100g chicken breasts
Tsp smoked paprika
Tsp + ⅛ tsp garlic granules
30g egg white
30g cornflakes, crushed
50g lighter mayo
½ tsp chipotle paste
Tsp distilled vinegar
2 rashers of streaky bacon
2 brioche buns
2 half fat cheddar slices
Heaped tsp crispy onions

Start by seasoning the chicken breasts with the smoked paprika and tsp garlic granules on both sides.
Dip in the egg, shaking off the excess before transferring to the crushed cornflakes. Press in the cornflakes to adhere to the chicken.
Transfer to the airfryer basket and cook for 16 minutes at 185 degrees celsius. Alternatively, bake in the oven at the same temperature for 20-22 minutes.
Meanwhile, mix together the mayo, chipotle paste, distilled vinegar and ⅛ tsp garlic granules until combined.
Next, grill the bacon according to packet instructions and toast the brioche buns slightly.
Once the chicken time is up, add the cheese slices and return for a further minute until melted.
Remove and add to the bottom bun, along with the cooked bacon and half of the sauce.
Top with the shredded lettuce and crispy onions.
Use the remaining sauce to spread over the remaining bun before placing on top.
