Trejo's Tacos

1 recipe fried Trejo’s Donuts (this page), still hot, placed on wire racks

Chocolate Crumb Topping

½ cup confectioners’ sugar

⅓ cup all-purpose flour

⅓ cup unsweetened Dutch-processed cocoa powder (we use Valrhona)

¼ teaspoon kosher salt

10 tablespoons (1¼ sticks) unsalted butter, cut into ½-inch pieces

Dark Chocolate Glaze

4 cups confectioners’ sugar

1½ cups heavy cream

1½ teaspoons Lyle’s Golden Syrup (see Trejo’s Tip, this page), light corn syrup, or honey

¼ teaspoon vanilla extract

4½ ounces 70% cacao bittersweet chocolate (we use the Guanaja variety from Valrhona), chopped (about ½ cup)

MAKE THE TOPPING Preheat the oven to 325°F.

Put the confectioners’ sugar, flour, cocoa powder, and salt in the bowl of a food processor and pulse to combine. Add the butter cubes and pulse until the texture looks like a very fine streusel (you don’t want to see any chunks of butter—but be careful not to over-blend). Transfer the crumbs to a parchment paper–lined sheet pan and spread them out evenly. Bake until the streusel is lightly toasted, about 15 minutes. Remove the pan from the oven and set it aside to let the topping cool completely. The crumbs will crisp as they cool.

MAKE THE GLAZE Sift the confectioners’ sugar into a large bowl. In a medium bowl, whisk together the cream, golden syrup, and vanilla. Add the liquid mixture to the confectioners’ sugar and whisk together until smooth.

Place the chopped chocolate in a microwave-safe bowl and melt it in 30-second bursts, stirring after each, until the chocolate is just melted and smooth. Add the chocolate to the sugar/cream mixture and stir to combine (the glaze will be thick). Set the glaze aside at room temperature.

FINISH THE DONUTS Using a rubber spatula, spread the glaze on top of the donuts. Sprinkle the chocolate crumble on top and let the glaze set up, about 5 minutes. Serve immediately or within 4 hours of making (see this page).

Notater

A donut topped with two kinds of chocolate—a creamy glaze plus a crunchy crumb topping—is a very good donut. This is another of our top sellers.
