Drunken Noodles

Ingredienser

1 pepper sliced thin

½ yellow onion sliced thin

1 cup grape tomatoes

¼ cup basil

2 zucchinis spiralized

2 green onions chopped

2 chicken breasts cubed

1 package of rice noodles

1 tbsp hoisin

2 tbsp fish sauce

2 tbsp soy sauce

1 tbsp tamarind paste

8 basil leaves

1 garlic clove

1 tbsp rice vinegar

2 tbsp sriracha

Vejledning

Bring two pots of a water to a boil

In one pot add rice noodles and cook as directed on the package. Typically 5 minutes and then remove, strain, and rinse under cold water

In the other pot add chicken and boil 3-5 minutes. Strain from water and place aside

In a bowl add the Drunken Noodle sauce and mix well, leave set aside

Heat 2 tbsp sesame oil in a large wok over medium heat

Once hot, add peppers, green onion, tomatoes, and yellow onions to the wok and mix

Cook for about 3 minutes and add in chicken, mix well

While the chicken is cooking with the veggies add the sauce and continue to cook 3-5 minutes

Slowly add in rice and zucchini noodles and carefully mix well

Once mixed well and brought up to a good temperature remove from the flame and serve
