1 recipe fried Trejo’s Donuts (this page), still hot, placed on wire racks
Tequila–Key Lime Glaze
3 cups confectioners’ sugar
5 tablespoons fresh Key lime or Persian lime juice
2 tablespoons blanco tequila
1½ teaspoons Lyle’s Golden Syrup (see Trejo’s Tip), light corn syrup, or honey
Maldon salt, for sprinkling
Grated zest of 2 limes
Vejledning
Sift the confectioners’ sugar into a large bowl. In a small bowl, combine the lime juice, tequila, and golden syrup. Add the liquid mixture to the confectioners’ sugar and whisk together until smooth.
Using a rubber spatula, spread the glaze over the top half of the donuts. Sprinkle the Maldon salt and lime zest over the glaze. Let the glaze set up, about 5 minutes, and eat the donuts immediately or within 4 hours (see Trejo’s Tip, this page).
Notater
I don’t consume alcohol in any form, so that means I don’t eat this donut, but people tell me it’s amazing. It’s our basic yeasted donut with a tequila-lime glaze.

LYLE’S GOLDEN SYRUP
A natural sweetener made from the sugarcane refining process, golden syrup is the secret weapon of bakers. It adds a smooth texture and complex sweetness to glazes for our donuts. The best quality is Lyle’s Golden Syrup, which originated in England and is now available in supermarkets across the United States and Canada. If you don’t have it on hand, you could use light corn syrup or even honey.
