Vegetable Beef Soup

Ingredienser

3 large potatoes, diced

1 cup onion, chopped

1 cup cabbage, chopped (optional)

1lb ground beef (or 12oz can of corn beef)

2 cups water

48oz tomato juice (not V8)

1 large (32oz) bag frozen mixed vegetables, thawed (or 1 can of corn and 1 can of peas with 1 cup chopped fresh carrot)

2 tsp salt

1 tsp pepper

2 tsp sugar

cooked macaroni (optional)

Vejledning

Peel and dice 3 large potatoes and chop vegetables.

Add potatoes (and fresh carrot/cabbage, if using) to a covered large pot with the 2 cups of water and boil until tender.

Fry ground beef (or corn beef) with chopped onion. Drain off any fat.

Add cooked beef/onion mixture, tomato juice, and thawed frozen vegetables (if using) to pot with potatoes.

Season to taste with the salt, pepper, and sugar.
