Potato Moussaka

3 large potatoes

1 aubergine

2 onions

2 green peppers

Tinned tomatoes

Margarine

Flour

Vejledning

Wash and cut the potatoes into slices about 1-2cm thick. No need to peel.

Boil the slices for 20-25 minutes til softer but holding their shape and not falling apart.

Meanwhile chop up aubergine, peppers, and onions into small cubes and cook together in a saucepan. Add herbs and seasoning.

In another pot, make a white sauce with equal parts (~50g) margarine/oil and flour to make a roux, and adding oat milk gradually til you have a sauce. Add in grated cheese.

Mix in a tin of tomatoes into the chopped veg, heat through and turn off the heat.

Drain the potatoes. Heat oven to 180C.

Layer our large glass dish: potato slices to cover the base, mixed veg, white sauce, extra grated cheese, and repeat.

Oven for 30 minutes. Serve with bread or salad.

Notater

Adapt veg as needed. Add another tin of tomatoes if preferred.

For GF, change flour in white sauce.
