Zutaten

Peel Eggplant, slide 1/8 inch, place on a tray, sprinkle with salt, let it sit (30m). (extract liquid)

Egg wash and breadcrumb them (Italian Breadcrumbs).

Place it on a cookie sheet.

Sprinkle Olive Oil on the Eggplant.

Put under the broiler for a few seconds.

(flip, repeat)

Take out put on paper towel.
