Ingredient Notes
Use any winter squash: butternut, kabocha, red kuri, etc.
The best vegan-friendly Thai curry paste is from Maesri.
If you have to a Southeast or East Asian grocery store, these ingredients will take this curry to new heights 🔥
Lemongrass: Adds a uniquely bright lemony/minty/gingery aroma. Peel away the papery layers and lob off the tough bottom and tops to get the inner tender, bendy part.
Thai basil. For slightly spicy, anise notes and quintessential Thai flavor. Add at the end.
Makrut lime leaves. If you can find these, omg 🤩 they are intoxicatingly good and full of citrusy flavor. You can simmer whole leaves in the curry, or chop them very finely and add at the end, which is what I did.
