Chicken Enchiladas

Zutaten

1 can (400g) tomato sauce

5g (1t) coarse salt

5g (1 1/4t) granulated sugar

10g (2t) white distilled vinegar

40g (2 1/2T) chipotle in adobo

50g (6T) chili powder

400g (1 2/3c) water

1 rotisserie chicken (400-450g/3c meat)

200g (about 2c) shredded Mex blend cheese + ~100g more for topping

Corn tortillas

Optional: Cilantro

Anweisungen

In blender, combine tomato sauce, salt, sugar, vinegar, chipotle in adobo, chili powder, water. Blend until smooth.

Pick chicken meat, chop, & mix with 200g/2c shredded cheese & 200g/1c enchilada sauce.

Heat tortillas & brush each side with enchilada sauce. Fill tortillas w/ 1/2c chicken mix, roll, & place in oven safe pan

Pour additional sauce over enchiladas & broil 2-3min. Top w/ sauce, cheese, & broil for 2 more min until cheese is melted

4.5.2025 Notes:

1. Forgot to add 400g water when blending so sauce was very thick and extra spicy; little difficult to spread on rolled enchiladas

2. Either work faster, or nuke the chicken/cheese/sauce mix before rolling. Was cold by time I rolled enchiladas up and popped under broiler. ~2 min under broiler + sauce cheese and 2 more min under broiler did not warm center of rolls.

3. If using a Costco rotisserie chicken (~900g chicken after shredding off carcass), DOUBLE the sauce when making and can make 2 batches of sauce/chicken mix to freeze one batch for later defrosting and adding cheese for a 2nd pan batch

4. Used white flour keto tortillas instead of corn tortillas

5. Original recipe said '200g cheese for filling and "a little more to top"...I used half a 2nd bag for topping bringing my total cheese number to ~300g lol
