0.88 cup Kemps Cottage Cheese

0.33 cup Chobani Greek Yogurt

4 tbsp Salsa

0.13 cup Old El Paso Enchilada Sauce

01 Stab chicken breasts with fork all over to tenderize.

02 Juice lime over chicken, then sprinkle with taco seasoning packet. Be sure to coat all sides

03 Air fry chicken at 400F for 13-15 min.

04 While chicken cooks, place cottage cheese, yogurt, salsa, enchilada sauce, and garlic powder to blender and blitz until smooth (adding salt to taste).

05 Once chicken is cooked, chop into bite sized pieces and place in a large bowl with the cheese sauce (from blender), the 4 tbsp of pico de gallo, and the cream and cheddar cheeses.

06 Mix until homogeneous and divide evenly among the tortillas. Roll them up and bake at 400F for 8-10 min.

07 You can freeze them once cooled. To freeze, wrap in a paper towel or parchment paper and then wrap in foil. To reheat, remove foil and place in microwave for 2-3 min on high.
