Lemon Braised Chicken & Potato’s

1 ½ lbs bone in skin on chicken thighs, drumsticks or combination of the two

4 yukon gold potatoes, peeled and quartered

4 sprigs fresh rosemary

4 sprigs fresh oregano

1 lemon, sliced

2 lemons, juiced

4 cloves garlic, minced or thinly sliced

⅓ cup plus 2 tbsp olive oil

2-3 cups chicken bone broth

Salt and pepper, to taste

Preheat oven to 350°F.

Combine juice of two lemons with garlic, ⅓ cup olive oil and a few pinches of salt in a measuring cup and whisk well to combine.

Season chicken generously with salt and pepper. Heat 2 tbsp olive oil in a braiser or dutch oven over medium high heat. Add chicken to hot oil skin side down and sear until golden brown, about 7-8 minutes. Remove from dutch oven and set aside.

Deglaze pot with 2 cups of bone broth, scraping the bottom of the pot to release anything that has stuck.

Add in potatoes then place chicken on top of and around potatoes, wedging it all into a single layer as much as possible. Pour lemon sauce over top then add fresh herbs and lemon slices all around.

Chicken should be fully submerged in braising liquid with only a small part of the skin showing above the liquid. Add more broth as needed to bring the liquid up to the right level.

Cover and braise for one hour. Remove lid, increase the oven temperature to 450°F and finish cooking uncovered for 20 minutes longer until the skin of the chicken has crisped back up in some areas.
