Hands down the easiest cookies I have ever made that are healthy, vegan, gluten free, and I used up the “too soft to eat” bananas on my counter! 🙌🏻

I have been that person who avoids desserts because of my goals! But let me tell you a little secret about sustainability...
Your journey has to be something you can maintain consistently OVER TIME!
So make the treats!! But make them healthy so you can eat them and still hit your health goals. 🤯🤯🤯
I am here as proof that it works! 😊
Here’s how 👩🍳:
1 ripe banana (mashed)
1/4 cup organic peanut butter (or any nut butter)
1 tbsp pure maple syrup (optional)
1 cup rolled oats (I used gluten-free)
1/3 cup dark chocolate chips (I use Lily’s)
1/3 cup chopped peanuts

In a small bowl, combine the mashed banana, peanut butter and maple syrup.
Stir in oats.
Fold in chocolate chips and chopped peanuts.
Scoop onto a lined baking sheet and flatten (this batch made 6 cookies). Add more chips on top if desired.
Bake in the oven for 10-12 minutes at 375F.
Remove from oven, add flaky sea salt (optional)
