Nepali Chicken Momo

1 lb ground chicken (use groundchicken thigh with fat when possible)
1 cup finely minced onion
1/2 cup finely chopped green onions, use both white and green parts (about 4 green onions)
2 tablespoon finely minced ginger
1-1.5 tablespoons momo masala (see notes below)
1 tablespoon salt
1/4 cup melted ghee, butter or neutral oil
1/4-1/5 cup warm water (see notes below)
36-40 scratch made or store-bought dumpling wrappers (I used wrapper about 3.5" diameter)

In a medium bowl, combine ground chicken with finely chopped onions, green onions, ginger, ghee, spices, and salt.
Slowly mix in and add water to help mix the ingredients. You don't want mo:mo mix to be too watery. Let it rest for at least 10 minutes or few hours in the fridge.
This is a great time work on your scratch dough (or make sure the wrappers are thawed and ready), and prepare the memo achar.
When ready to start wrapping, take about 1 tablespoon mo:mo filling and place it on a mo:mo wrapper and fold them to your desired shape. You may need more or less depending on the shape of the wrapper. If using a store-bought wrapper, you will need to little water on the edges of the wrapper to help seal during wrapping.
Fill a steamer with water and grease the steamer basket with oil, oil spray or line it with parchment paper, lettuce or cabbage leaves.
Bring the water to a rolling boil. Steam dumplings for 10-12 minutes (or longer if your wrapper is thick and large in size) and gently shake the steamer basket and transfer it directly into your plate.
Enjoy it hot with your favorite tomato achar.

Mo:Mo masala is made with a mix of different spices and it’s a personal preference; some people enjoy mo:mo without the spices (masala) and some people like it.
In a pinch, you can use garam masala or curry powder or make a spice mix mix using 2 teaspoon cumin, ½ teaspoon coriander powder, pinch of red chili powder, and dash of cinnamon powder.
