Water Kefir Recipe (Tibicos)

Initial fermentation:
4 cups water
1/4 cup unrefined cane sugar
2 tablespoons water kefir grains
5 - 8 raisins
Second fermentation for fizziness and flavor:
Fruit juice ((grape, pomegranate, apple, pineapple etc.)) or concentrate/syrup to taste . Roughly 1/8 - 1/4 cup in each bottle
If using a concentrate/syrup, try half the amount you normally do for fruit juices first
Instrucciones
Initial Fermentation:
If in the fridge, place 1/2 gallon mason jar with water kefir grains on the table to allow to begin returning to room temperature.
Bring 1 cup water to a boil over medium-high heat, and then stir in the sugar until it dissolves. Pour the rest of the water in to help cool the water down to room temperature.
Once cooled, strain kefir grains and place them back in the jar and pour the room-temperature sugar water in. Drop in the raisins and cover loosely with cheesecloth or coffee filter secured by kitchen twine or a rubber band. Let it culture for at least 24 hours and up to 72 hours on the countertop. Wait for the raisins to float or until 72 hours has passed, whichever comes first.
Strain the kefir water through a nonreactive strainer into a pitcher. Discard the spent raisins, but reserve the water kefir grains.
Store the reserved kefir grains in sugar water in the fridge up to 3 months.
Serve the kefir right away, or continue with the second fermentation below.
Second Fermentation:
For the secondary fermentation, pour 1 cup fruit juice into the kefir. And then pour the flavored kefir into flip-top bottles, filling them to where the neck starts narrowing.
Seal the bottles, and set them on your countertop to ferment further. Burp them by opening the flip top each morning and evening. Continue doing so until you are satisfied with their level of fizziness (generally 24-48 hours).
Keep in mind that warm temperatures will speed up the fermentation process while cool temperatures will slow it down.
Open carefully and do not shake/swirl prior to opening (behaves like a soda at this point).
