Chicken Caesar Salad Wraps

Ingredientes

2 boneless, skinless chicken breast halves (about 12 oz)

Olive oil

2 garlic cloves, pressed

1/4 cup red onion, chopped

1/4 cup pitted ripe olives, chopped

1/4 cup red bell pepper, chopped

4 oz fresh Parmesan cheese, grated (about 1/4 cup)

4 cups Romaine lettuce, thinly sliced

3/4 cup Caesar salad dressing

6 (8-inch) flour tortillas

Instrucciones

1. Lightly spray chicken with oil and press garlic into the chicken. Cook over medium heat until done. Slice into 1/4-inch strips. Set aside.

2. In a bowl, combine chicken, onion, olives, and bell peppers. Grate Parmesan cheese. Slice lettuce.

3. Toss the chicken mixture with dressing.

4. For each wrap, place about 3/4 cup of mixture on a tortilla. Roll up tightly. To serve, cut each roll in half diagonally.

Notas

Yields 6 servings. Approximately 3/4 cup of salad dressing is needed for this recipe.
