Ingredientes

4 eggplants

3 bell peppers

2 heads of garlic

3 tomatoes

4 spicy chilies (optional)

1/4 cup @ndcmuscat olive oil

salt to taste

1 tsp cumin powder (optional and forgot to mention)

heaping bunch of chopped parsley

Note: the amount of veggies can vary. Use what you have more or less up to you as long as you go heavy on the eggplants.

grill everything in the oven while flipping it every 15 minutes (heat from top and bottom)

You can also do it on the stove by directly placing the veggies on the fire for a nice char.

let all the veggies cool completely while covered then peel the skin off as much as you can and finely chop everything.

fry the garlic and chili in a good drizzle of olive oil and start mashing it. add each vegetable one at a time. Mash for a couple of minutes then add the next one.

once everything is mashed. Keep stirring on medium high heat till all the juices have evaporated.

season with salt. An optional tsp of cumin powder, another drizzle of olive oil and the chopped parsley.

Instrucciones

place it on the serving plate. Make a well for dipping. Drench it with olive oil. Have it with a loaf of bread and enjoy.
