Cilantro Lime Chicken Skewers

Ingredientes

1 ⅕ kg boneless, skinless chicken thighs, cut into bite-sized chunks

1 cup fresh cilantro leaves, packed

5 cloves garlic

1 tbsp fresh ginger, chopped

1 tsp ground cumin

1 tsp paprika

1 tsp chili flakes (adjust to taste)

Zest of 1 lime

Juice of 2 limes

3 tbsp olive oil

1 tbsp honey (optional for a touch of sweetness)

Salt and black pepper to taste

1/2 cup Greek yogurt

1/4 cup mayonnaise

1/2 cup fresh cilantro leaves, packed

1 garlic clove

Juice of 1 lime

Zest of 1/2 lime (optional, for extra zing)

1 tbsp olive oil

1/2 tsp cumin

Salt and pepper, to taste

1–2 tsp honey or sugar (optional, to balance tartness)

1–2 tbsp water (to thin, if needed)

Instrucciones

CHICKEN SKEWERS

Mix the Marinade (No Blending!)

In a large bowl, whisk together chopped cilantro, garlic, ginger, cumin, paprika, chili flakes, lime zest, lime juice, olive oil, honey, salt, and pepper.

Marinate the Chicken (Quick Method)

Add chicken thigh pieces to the bowl. Toss well until everything is coated. Let it sit for 20–30 minutes at room temp while you soak wooden skewers (if using) and prep the sauce.

Skewer the Chicken

Thread the marinated chicken pieces onto skewers, not too tightly packed.

Air Fry the Skewers

Preheat your air fryer to 400°F (200°C).

Place skewers in the air fryer and cook at 400 F for 12 minutes flipping halfway.(in a single layer).

CILANTRO LIME SAUCE

Add cilantro, garlic, lime juice, lime zest, cumin, salt, pepper, Greek yogurt, mayo, olive oil, and honey to a bowl.

Mix it all up. If it's too thick, add water 1-2 tablespoon at a time until it reaches your desired consistency.

Taste and adjust seasoning — add more lime for tang, honey for sweetness, or salt for punch.

Chill for at least 15 minutes before serving (if you have time — it lets the flavors meld).
