Chicken & Coconut Curry
This is a rich and flavorful curry that combines the sweetness of coconut milk with the savory elements of the chicken and veggies.
Ingredients:
Ground chicken
1 red bell pepper, chopped
3-4 green onions, chopped (reserve some for garnish)
1 can coconut milk
1 cup peas
2 carrots, sliced thinly
Garlic (2-3 cloves, minced)
1 tbsp ginger (or 1 tsp powdered ginger)
1 tbsp curry powder (or more to taste)
1 tsp turmeric (optional)
1 tbsp soy sauce
Olive oil or vegetable oil
Salt and pepper to taste
Lime juice (optional, for a bit of brightness)
Fresh cilantro for garnish (optional)
Instrucciones
Instructions:
Cook the ground chicken: In a large pot or deep skillet, heat oil over medium-high heat. Add the ground chicken and cook, breaking it apart, until browned. Season with salt and pepper. Remove the chicken and set aside.
Sauté the veggies: In the same pot, add a bit more oil if needed. Sauté garlic, ginger, and curry powder for about 1 minute until fragrant. Add the carrots, red bell pepper, and peas, and cook for another 3-4 minutes until they start to soften.
Add coconut milk and seasonings: Pour in the coconut milk, soy sauce, turmeric (if using), and a little more salt and pepper. Stir to combine and bring to a simmer.
Add chicken back in: Return the cooked chicken to the pot. Let the curry simmer for about 10 minutes to let the flavors meld and the sauce thicken slightly.
Finish and serve: Adjust seasoning, adding more salt, pepper, or lime juice if necessary. Serve the curry over rice or with naan, and garnish with chopped green onions and fresh cilantro if desired.
