3 lb chuck roast, patted dry and seasoned generously on all sides
2 small onions, roughly chopped
5 cloves garlic, smashed
3 Tbsp tomato paste
2 Tbsp flour
2 cups beef broth
1-1.5 cups red wine (can swap in more stock if you’d rather)
Large sprig fresh thyme
Small handful fresh parsley
1 Tbsp Worcestershire sauce
1 ½ lbs small potatoes
5-6 large carrots
Salt and pepper to taste
