3 eggs
Lime (optional)
1/2 tbsp sugar
1 tbsp fish sauce
1 tsp white pepper
2 tbsp water
Vegetable oil

1. Make the sauce by mixing sugar, white pepper, fish sauce and water. Stir until the sugar dissolves. Set aside.
2. Crack the eggs into a bowl. No need to season them.
3. Beat the eggs like you would for an omelet, adding a squeeze of lemon to make the omelet soft and fluffy.
4. Add the oil to the pan. It should be very hot. Pour the egg mixture into a round bottom wok (ideally) or a nonstick frying pan. Wait until you can see ragged edges starting to form and the egg is browning.
5. Pour the fish sauce around the omelet and immediately flip the omelet over. Fry a moment more and then serve on a plate.
6. Wait 30s to one minute for carry over cooking to finish.
Garnish with extra thai chili, coriander, or vinegar as you desire.
