Pan Seared Snapper Oscar Style

4 fillets of Red Snapper

Salt

Pepper

Garlic powder

2 Tbsp Olive Oil

1 Tbsp Butter

1 cup Crab

5 Egg Yolks

2 Tbsp Lemon Juice

2 tsp Dijon Mustard

1/2 tsp Salt

3 pinch Cayenne Pepper

1 cup Clarified Butter (aka Ghee)

Green onion (garnish)

Sauce:

Melt clarified butter in a bowl

Add egg yolks, lemon juice, Dijon, salt, and cayenne pepper to a blender and blend on high for 5 seconds until combined.

With blender on medium high add in the clarified butter in a steady stream.

Mix and done.

Fish:

Pat fillets dry with a paper towel.

Season fillets with salt, pepper and garlic powder.

Add olive oil and butter to a large pan in a ratio of 2 oil to 1 butter. Enough to cover the bottom of the pan but not too much to drown the fish. Heat over medium high heat.

Once butter is melted and oil is hot put fish in the pan and sear it for 3 minutes on each side.

Heat your crab in the same pan.

Serving:

Fish on bottom. Put the crab on top of the fish. Pour the sauce over the whole thing. Garnish with green onion.
