Quinoa:

Cook quinoa according to instructions, set aside

Salad - All rough chop:

2 mini Cucumber

10-15 cherry Tomatoes

1/2 Red Onion

... 2-3 tbsp Cilantro

Olive oil

Salt and pepper

1/2 Lemon Juice

Tofu:

Chop full block of firm or extra-firm tofu into small squares

1/4 - 1/3 cup Olive Oil

1/2 Lemon Juice

1 tsp Salt

1 tsp Red Pepper Flakes

1 tsp Oregano

Pepper

1-2 tsp nutritional yeast, optional for cheesy flavor

Hummus:

Make homemade, or buy from store

Topping:

Sumac

Kalamata Olives

Ohjeet

1. Wash Quinoa and cook

2. Make tofu marinade. In a mason jar, place chopped tofu and add all tofu ingredients. Shake gently and eat immediately, or keep in fridge for a few days

3. Chop all ingredients for salad, mix together and set aside

4. Either make hummus, or use store bought.

5. Serve together in a bowl. All ingredients are roughly the same amount. Sprinkle sumac on top.
