Sweet Potato Apple & Chard Hash

One med-large sweet potato (peeled and chopped small)
1 med Pink Lady apple (or other crisp apple peeled and chopped)
1 small onion (or 1/2 med quartered and sliced)
Large handful fresh chard (chopped)
Olive oil
2-3 tbsp water
sea salt and pepper
Tuscan Heat Spice (4 parts basil 2 parts rosemary 2 parts oregano 2 parts garlic powder 1 part low heat cayenne 1 part ground fennel)
eggs (cooked to preference, if serving as breakfast)
Walnuts or pepitas

Oven to 425.
Chop sweet potatoes and apples and onions. Cover in olive oil and 1 tsp spice blend, salt and pepper.
Spread on a baking sheet. Roast for 20 minutes until golden and soft, stirring once or twice.
In a sauce pan, wilt the chopped chard in 2 tbsp water for several minutes.
Combine chard with sweet potato mix. Top with nuts.
Serve as a side dish with any meal, or with eggs for breakfast or brunch. Enjoy!
