Mom's Shepherd's Pie

1 pound medium ground beef
1 cup diced onion
2 cups frozen vegetable medley (peas, carrots, green beans)
2 (14.75-ounce) cans cream-style corn

For mashed potatoes:
6 cups diced peeled yellow potatoes

6 garlic cloves, peeled
½ cup heavy cream
4 tablespoons salted butter
Freshly ground black pepper

For the mashed potatoes:
In a medium pot, add the potatoes with enough water to cover them. Add a pinch of salt. Bring to a boil over high heat and boil for 5 minutes. Add the whole cloves of garlic and continue to cook until the potatoes are tender, approximately 15 minutes.
Drain the potatoes in a colander. Let them sit in the colander for at least 3 minutes to steam-dry.
While the potatoes are sitting, put the cream and butter in the potato pot along with some salt and pepper. Heat the cream and butter just until the butter melts.
Return the potatoes and garlic to the pot and mash with a potato masher until smooth. Taste the potatoes and season with a little more salt and pepper if needed.
For the pie:
Preheat the oven to 375°F.
Warm a large ovenproof skillet over medium-high heat. Add the olive oil and ground beef. Cook the beef for 9 to 10 minutes, until it is browned.
Drain off the fat, add the onion to the pan, and cook for another 5 minutes. Add the frozen vegetable medley and cook for another 3 to 4 minutes to warm the vegetables.
Add the cream-style corn and cook just until it starts to boil. Taste the mixture and season it with salt and pepper. Remove from the heat, smooth out the top using a spatula, and let it rest for 10 minutes.
Cover the shepherd’s pie with the mashed potatoes. Put the skillet on a baking sheet and bake in the oven for 35 minutes. Remove from the oven and let the shepherd’s pie rest for another 10 minutes before serving.

Ніби той самий рецепт, але начинки чомусь вийшло помітно більше. Може я погарячкував з «дві чашки овочів = 500 грам овочів»? Зрозумів, чому начинка сухувата: в оригіналі має бути «крім стайл корн», по суті кукурудза в бешамелі. В мене ж просто кукурудза. Бешамель (чи вже крім стайл корн) готувати влом, тим більше і так непогано виходить.
Помилка: запікати під кришкою. Не утворилась шкірка, а внизу зібралось багато рідини. Рідину сцідив (і випив, смачно), засунув під гриль, шкірку утворив, але нотабене на майбутнє так не робити.
