Sabrina’s Special Soup (Knoephla)

Ingrédients

For dumplings

  • 2 cups flour

  • 2 eggs

  • 1/2 cup milk

  • 1 teaspoon salt

1 tablespoon butter

1/2 cup chopped onion

8 cups chicken stock

1/2 of a bay leaf

5 medium potatoes, diced

1 cup heavy cream

1 teaspoon salt

1 tablespoon parsley flakes

1/2 teaspoon pepper

Instructions

Mix all dumpling ingredients in a bowl and combine well.

Divide dough into two equal parts to make it easier to work with.

Roll each piece out with your hand so it is approximately 1 inch in diameter and like a rope. If needed, sprinkle with flour to make dough easier to work with.

Cut into 1-inch dumpling pieces and set aside.

In a large soup pot, melt butter and sauté onion until translucent.

Add chicken stock and bay leaf and bring to a boil.

Add dumplings one at a time while soup is boiling.

Reduce heat and simmer for 10 minutes.

Add potatoes and simmer for an additional 10 minutes.

Add heavy cream, salt, pepper, and parsley flakes.

Simmer for 3-5 additional minutes.

Take out the bay leaf and serve.
