Pizza Pie Cafe Alfredo Sauce

4 lbs. Butter Blend (cubed)
⅓ cup Minced Garlic
10 quarts of Half & Half (2.5 gallons)
DRY INGREDIENTS:
2 ½ cups Flour
2 ½ tbsp Salt
2 tbsp Black Pepper
4 cups Parmesan Cheese
Instructions
1. Place at least 4 quarts of Half & Half in a warmer.
2. Combine all dry ingredients except cheese.
Procedure:
1. Melt Butter Blend in steam kettle at level 8.
2. Add garlic, stirring until mixed.
3. Gradually add dry ingredients.
4. Add Half & Half, stirring until thickened.
5. Add Parmesan Cheese, turn off heat and stir to blend.
6. Test thickness, cool, and label once ready.
Notes
Benchmark: Alfredo should be creamy, not lumpy.
