Shoofly Pie

2 cups flour
dash nutmeg, ginger, cloves
2/3 cup sugar
1/8 tsp. cinnamon
1 cup molasses
1 cup water
1/4 tsp. baking soda added to water
1/4 tsp. baking soda added to flour
2 1/2 Tbls. shortening
dash salt
Instructions
You can use Karo pancake syrup as the molasses. Mix water and molasses together, adding baking soda. Blend flour, spices, sugar, salt and baking soda together. Add shortening and blend well, into fine crumbs. Into an unbaked pie shell pour one third of the liquid, then one third of the flour mix, continuing till you have made three layers. After the second layer of crumbs poke your finger into the pie to help the crumbs blend with the liquid. Do not stir the mixture. This makes a deep 9" pie. Bake at 425° for 15 minutes and at 375° for an additional 45 minutes.
Notes
This is a wet bottom shoofly because it has a layer of molasses that forms on the bottom while baking.
