Salsa to Can

12 1/2 lbs. tomatoes, skinned (enough for 9 quarts)
4 cloves garlic
1 bundle of celery
5 onions
4 bell peppers
1/2 cup cider vinegar
1/4 cup salt
1 can diced jalapenos (4 oz.)
10 drops of Tabasco sauce (more/less to taste)
1 cup corn starch
Instructions
Pulse all vegetables in food processor individually to desired size. Combine all ingredients except jalapenos, Tabasco, and cornstarch. Simmer for 1 1/2 hours. Add jalapenos, Tabasco, and cornstarch (premixed with water). HOT pack for 20 minutes.
