Veggie Chili

1 red onion (chopped)
1 red bell pepper (chopped)
2 carrots
2 celery ribs
4 garlic cloves
1 zucchini
28oz canned diced tomatoes
2 tablespoons chili powder
2 teaspoons cumin
1 1/2 teaspoons paprika
1 can black beans
2 cans red kidney beans
1 can light red kidney beans
2 cups veggie broth
Mexican cheese
Sour cream
Avacado
Instructions
Cook onion, bell pepper, carrots, celery, salt, pepper, and olive oil in chili bowl on medium temp
Add garlic after a few minutes
Add spices (chili powder, cumin, and paprika)
Add beans (without juice), diced tomatoes (with juice), broth, and zucchini
Cook at a simmer/low boil for 45 minutes
Top with Mexican cheese, sour cream, and avacado
