Savory Sausage Dressing Bundt

1 pound smoked sausage, chopped
2 cups chopped yellow onion
1 cup chopped celery
6 cups crumbled cornbread
4 cups chicken broth
4 large eggs, lightly beaten
1/4 cup chopped fresh parsley
1/2 teaspoon kosher salt
1/2 teaspoon ground black pepper
Cranberry sauce, to serve
Instructions
1. Preheat oven to 350°F. Spray a 12-cup Bundt pan with cooking spray.
2. In a large skillet, cook sausage over medium-high heat until browned, about 5 minutes. Remove sausage using a slotted spoon, and let drain on paper towels, reserving drippings in skillet. Add onion and celery; cook, stirring occasionally, until softened, about 5 minutes.
3. In a large bowl, gently stir together onion mixture, cooked sausage, cornbread, broth, eggs, parsley, salt, and pepper. Spoon mixture into prepared pan, pressing gently with the back of a spoon.
4. Bake until top is golden brown and dressing is firm to the touch, 40 to 55 minutes. Let cool in pan for 10 minutes. Carefully invert onto a flat serving platter. Serve with cranberry sauce, if desired.
