Curried Chicken and Rice Salad

Ingrédients

½ cup mayonnaise

2 med stalks celery

½ cup plain yogurt

½ cup chopped bell pepper

¾ tsp curry powder

1 can (15-1/4 oz) pineapple chunks drained

½ tsp ground pepper

3 cups cold cooked rice

2 med tomatoes cut into wedges

2 cups cut-up cooked chicken

Instructions

Mix mayonnaise, yogurt, curry powder, ginger, salt, and red pepper in a large bowl. Stir in rice, turkey, celery, bell pepper, pineapple. Cover & chill. Before serving, line plates with salad greens. Divide salad and garnish with tomato wedges.
