Chicken Tortilla Soup

2 T olive oil
1 onion, chopped
3 celery stalks, chopped
2 garlic cloves, minced
1 can tomatoes
3 cans chicken broth
1 tsp oregano
1 tsp cumin
1 tsp chili powder
½ tsp red pepper flakes (optional)
3 shakes Tabasco
1 cup frozen corn (or more if desired)
¼ cup fresh lime juice (or more if desired)
1 rotisserie chicken, meat off and shredded
Instructions
Heat oil in pot. Add onion and celery, cook 4 min or until onion is translucent. Add garlic and can of tomatoes. Cook until heated through. Add chicken broth and spices. Simmer for 5 min. Taste and adjust spices to your liking. Add corn and chicken. Simmer at least 15 min but can simmer longer if you like. Add lime juice before serving in bowls. Top each bowl with cheese, avocado, sour cream, tortilla chips and lime wedges.
