Fajita Chickpea & Halloumi Meal Prep Bowls

Ingrédients

1 x 400g tin of chickpeas

2 red or yellow bell peppers

1 garlic clove

1 red onion

Halloumi (30g per serving)

1-2 tsp olive oil

7-8 cherry tomatoes

2 tsp fajita seasoning/spices

1/2 avocado (1/4 per serving)

Instructions

Add 1-2 tsp olive oil to a pan, heat on low - medium.

Add in the diced peppers, and cook for around 15 minutes until soft, adding a dash of water if needed.

Add in the diced onion & chopped garlic, cook for a further 5 minutes until softened.

Add in the spice mix and the tomatoes (sliced into halves). Allow to cook down for a further 10 minutes.

Add the remaining olive oil to a saucepan and heat on medium - add the halloumi (sliced into cubes) and fry for around 5 minutes / until golden.

Add the drained chickpeas to the fajita mix. Season with salt & pepper if needed.

Add to a container or plate into two servings, top with the halloumi & serve with salad leaves of choice. Add 1/4 sliced avocado to each portion.
