Beef Sate

10 oz. beef or chicken or pork
1 medium onion, finely grated
1½ tsp. ginger, grated fine
2 tsp. sugar
½ tsp. ground chili paste
1 tsp. ground coriander
2 Tbsp. thick coconut milk
¼ tsp. salt
1 Tbsp. soy sauce
½ tsp. ground cumin
½ tsp. ground coriander
Instructions
Cut meat into 1" cubes. Add remaining ingredients and mix thoroughly. Cover and marinate at least one hour. Rub skewers with oil. Thread meat on skewers. Grill over glowing charcoal. Serve hot with peanut sauce.
Peanut sauce:
1 cup peanut butter
2 Tbsp. peanut oil
1 Tbsp. ground chili paste
1 Tbsp. sugar
1 Tbsp. soy sauce
¼ cup water
½ cup coconut milk (or cream)
½ tsp. lemon grass powder
Heat and thin with water to desired consistency.
