Sautéed Pork/chicken With Sweet Potatoes And Pears

Ingrédients

3 T Olive oil

4 skinless, boneless chicken breast halves or pork chops

1/4 t salt

Pepper

1 large sweet potato, peeled and cubed (1 1/2 c)

1 firm pear- peeled, cored and cubed

1 1/2 T Red wine vinegar

1 T Dijon mustard

1 T fresh tarragon leaves, chopped

Instructions

Heat the oil in a large skillet over medium heat. Sprinkle the chicken or pork with salt and pepper, sauté until cooked through, 8-10 minutes per side. Check for done temperature. Remove from skillet, cover and set aside.

Add sweet potato and 1/2 c water to the skillet and cook over medium heat, stirring- about 5 min. Add the pear and cook for 5 more min or until the potato is tender. Transfer to a bowl. Toss with vinegar, mustard, tarragon, salt and pepper and 3 T of water.

Divide the chicken/pork among 4 plates, spoon vegetables over chicken.

Notes

Delicious! you can substitute the chicken with pork or salmon.

Use a nice crisp pear.
