Coconut Lime Chicken

Ingrédients

4 chicken breasts or thighs

1 can coconut milk (13.5 oz)

2 tosp lime juice

1 tosp lime zest

2 cloves garlic, minced

1 tosp soy sauce

1 tosp olive oil

1 tsp ginger, minced (optional) e

Salt & pepper to taste

1 cup jasmine or basmati rice

Fresh cilantro for garnish

Lime wedges for serving

Instructions

Marinate the Chicken: In a bowl, mix coconut milk, lime juice, lime zest, minced garlic, soy sauce, ginger (if using), salt, and pepper. Add the chicken and marinate for at least 30 minutes (or overnight for extra flavor).

Cook the Chicken: Heat olive oil in a skillet over medium heat. Remove the chicken from the marinade and cook for 5-7 minutes per side, until golden brown and cooked through. Set aside. &

Prepare the Rice: While the chicken cooks, prepare the rice according to the package instructions. Fluff with a fork when done.

Make the Sauce: In the same skillet, pour the remaining marinade and bring it to a simmer for 5 minutes to thicken slightly. Stir occasionally.

Assemble: Serve the chicken over the rice, drizzle with the coconut lime sauce, and garnish with fresh cilantro and lime wedges.
