Cauliflower Steaks With Hummus

Ingrédients

1 Cauliflower head (as dense/tight as possible, to make slicing easier)

1/4 c olive oil

2 t paprika

2 T. Canned Adobo Chili (Optional)

1/4 t salt

6 cloves fresh garlic, minced

1/3 c freshly grated Parmesan cheese

3/4 c mild cheese (Emmental or equivalent)

8 oz hummus

Instructions

  1. Heat oven to 400. Line baking sheet with parchment paper

  2. Slice cauliflower into 3/4” thick slices, trying to keep them intact. Lay on parchment paper.

  3. In small bowl, mix oil, paprika, salt, Parmesan and garlic. (Optional, add adobo chilis) Brush mixture over both sides of the cauliflower steaks.

  4. Bake in oven for 25 min.

  5. Sprinkle mild cheese over cauliflower and bake for additional 5 min. Remove from oven.

  6. Spread hummus on plate and set roasted cauliflower on top of hummus.

  7. Serve with a green salad

Notes

This recipe was adapted from a YouTube video. The adobo chili was added by Matt. This is a very rich, deceptively filling meal. Very delicious!
