Feather-Light Overnight Rolls
3 to 4 dozen rolls

1 cup water
1 cup butter
¾ cup sugar
2 teaspoons salt
1 cup cold water
2 packages yeast
½ cup warm water
4 eggs, beaten
7½ cups flour
Butter for spreading on dough
Instructions
In a 6-quart pan, bring 1 cup of water to a boil. Add butter, sugar, and salt, then remove from heat. Add 1 cup cold water. Dissolve yeast in ½ cup warm water (not hot). When the mixture is lukewarm, add yeast and beaten eggs. Stir briefly, then add flour and mix together. Cover pan with lid and refrigerate overnight. Divide dough into thirds. Roll each third into a ¼-inch thick circle. Spread dough lightly with butter. Cut into wedges and roll up, starting at the wide end. Place on greased baking sheets. Let rise about 4 hours. Bake at 400°F for 12 minutes.
Notes
If doing ahead, freeze after dough has been shaped into crescent rolls.
